Breakfast Casserole

Cook and season hash browned potatoe patties as usual, in sufficient quantity to completely cover the bottom of baking pan. 30 oz. Will fit an 8 x 12 pan. (You could also use bread instead of potatoes, especially a good hearty bread like foccacia, but increase the eggs if you do.)

Scramble 8 or more eggs with one can of cream of mushroom soup. Spread evenly over potatoes.

Add sausage, bacon or ham in bite-sized pieces. Sprinkle with grated cheese. You can also add some salsa if you want a little spice to it. You can experiment with anything else you like such as peppers, mushrooms, etc.

You may either cover the casserole and refrigerate it at this point, or cook it.

Preheat oven. Bake at 350 degrees until heated through and cheese has melted. If it has NOT been refrigerated this will only take 15 – 20 minutes. If it has been refrigerated, it may take about 35 - 45 minutes. Watch it carefully.
